Mini Quiches


3 Eggs
1 /4 cup of milk (half & half or milk alternative may be substituted)
1/2 cup of shredded cheese of choice
1/2 tsp of garlic powder
2 Kale leaves (deveined and chopped)
5 broccoli florets, chopped
2 strips of bacon
5 broccoli florets, chopped
Avocado or olive oil


  • Preheat oven to 350°. Spray or lightly butter muffin pan. Saute kale in pan with some oil until wilted.  Chop / Mince cooked bacon and kale.
  • Mix eggs, garlic powder, and milk together. Add in cheese, kale, broccoli, and bacon / kale mixture
  • Scoop into prepared muffin pan until ¾ full. Bake for 10 min. Let them cool before serving.


*I often add different veggies and cheeses every time I make it to change it up (and get different veggies in my little one). Makes bout 6 mini quiches (depending on muffin pan used).
